I love pasta, but most pasta recipes are for 4 to 8. I found this single serving recipe in a very old Taste of Home Magazine for a single serving and this was excellent. I wanted to share this, for the times when you only want pasta for one serving. I never would have guessed that 1/2 cup uncooked penne pasta would have been enough, but it is the perfect pasta serving. Plus, I used gluten-free pasta-only because at one point I thought I was allergic, but it turns out I'm not and I needed to use up the pasta. I couldn't tell the difference in flavor.
1/2 cup uncooked penne pasta
2 tsp. all-purpose flour
3/4 tsp. chicken bouillon granules
1/4 tsp. garlic powder
1/4 tsp. dried parsley flakes
dash dried oregano
dash pepper
2 small fresh mushrooms, chopped
2 tbsp. chopped onion
1 1/2 tsp. diced sweet red pepper
1 1/2 tsp. olive oil
1/3 cup 2% milk
2 tbsp. shredded Parmesan cheese
Cook pasta according to package directions. Meanwhile, in a small bowl, combine the flour, bouillon, garlic powder, parsley, oregano and pepper.
In a small nonstick skillet, saute' the mushrooms, onion and red pepper in oil until tender. Stir in flour mixture. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in Parmesan cheese. Drain pasta; add to mushroom mixture and stir to coat.

Speaking of gluten-free products, I tried the Pillsbury gluten-free pie dough. Blech, horrible, all I could taste was the oil in it. Easy product to use, but Blech.....
So after making the pasta, I had leftover milk, mushrooms, onions and red pepper, so I used some of it to make a frittata. Of course, I will be having frittata forever, because it makes 8 servings, but I can freeze some of it.
